Italy – Pasta di Grano Saraceno (Buckwheat Pasta) with Pesto
Materials:
- 250g buckwheat pasta
- 1 bunch of basil
- 50g pine nuts
- 2 cloves garlic
- 50g parmesan
- 80ml olive oil
- Salt & pepper
Implementation:
- Boil the buckwheat pasta in salted water.
- In a blender, blend basil, pine nuts, garlic, parmesan and olive oil .
- Mix with the pasta and serve with extra parmesan !
Japan – Soba Noodles Stir-Fry (Buckwheat Noodles with Vegetables)
Materials:
- 200g Soba noodles (100% buckwheat)
- 1 carrot cut into strips
- ½ pepper, chopped
- 1 tbsp tamari soy sauce (gluten-free)
- 1 tsp sesame oil
- 1 tbsp toasted sesame seeds
Implementation:
- Boil the Soba noodles and rinse them with cold water.
- Sauté the vegetables in sesame oil , add the noodles and soy sauce .
- Serve with sesame seeds & fresh onion !
Thailand – Pad Thai with Rice Noodles 
Materials:
- 200g rice noodles
- 100g chicken or shrimp
- 1 egg
- 1 tbsp tamarind sauce
- 1 tbsp fish sauce
- 1 tbsp coconut sugar
- 50g ground peanuts
Implementation:
- Soak the rice pasta in lukewarm water.
- Sauté the chicken and add the egg.
- Add the noodles, tamarind sauce and peanuts.
- Serve with lime & coriander !
China – Glass Noodles with Crispy Vegetables
Materials:
- 200g glass noodles (bean noodle soup)
- 1 zucchini cut into strips
- ½ pepper, chopped
- 1 tbsp tamari soy sauce
- 1 tsp grated ginger
Implementation:
- Boil the glass noodles and rinse them.
- Sauté the vegetables, add the noodles and soy sauce.
- Mix and serve with fresh onion !
Vietnam – Pho with Rice Noodles
Materials:
- 200g Pho noodles (rice noodles)
- 500ml beef broth
- 100g thinly sliced beef
- 1 cinnamon stick
- 1 tsp shrimp paste
- ½ lime
Implementation:
- Boil the broth with cinnamon & shrimp paste .
- Boil the Pho noodles and drain them.
- Serve the noodles with beef and hot broth .
India – Dosa (Indian Rice & Lentil Pancakes)
Materials:
- 200g rice flour
- 100g lentil flour
- 1 tsp cumin
- 1 tsp salt
Implementation:
- Mix the rice flour with the lentil flour and water.
- Let the dough rest and fry thin pancakes.
Greece – Gluten-free Trachanas
Materials:
- 200g corn trahanas
- 1 liter of vegetable broth
- 1 grated tomato
- 50g feta cheese
Implementation:
- Boil the trachanas in broth.
- Add the tomato and serve with feta cheese .
